Gluten Free Meatloaf Recipe

Ingredients
2 lbs ground beef
2 large eggs
2 ozs applesauce
1 cup gluten-free cracker crumbs (or gluten-free bread crumbs)
1 chopped onion (medium)
1/4 cup green pepper (chopped)
2 tsps gluten free worcestershire sauce
1 cup gluten-free ketchup (divided, I used Annie's Naturals Organic Ketchup)
Preparation
Preheat oven to 400° F / 204° C
Combine all ingredients, except 1/2 cup of ketchup in a large mixing bowl. Use your hands to thoroughly blend the mixture. I like to use disposable gloves for this job! Add a small amount of milk or water if necessary to make the mixture moist.
Use a large spatula to turn the meat mixture into a 9x5x3-inch loaf pan. Press down and smooth the top.
Bake in preheated oven for 30 minutes and carefully remove pan and pour off excess fat. Spread remaining 1/2 cup ketchup over the top of loaf, return to oven and bake for an additional 30 minutes.

Everything w/ bacon is better - duh!
I added to this recipe: 1. put a full garlic blossom in tinfoil with about 1.5 tablespoons of olive oil wrapped tight and put in oven for 20 minutes at 425 degrees before mixing the meat mixture. The heart of each garlic clove slides right out of the shell when done and into the meat mixture (roasting garlic makes garlic sweater). 2. Meat recipe - always gets bacon! 4 strips fried and broken 3. Added seasoning salt to meat. 4. sautay the onions in a little bacon grease and add mushrooms. 5. I use 1/4 cup red wine and reduce until wine is mostly gone but carmelized onions and mushrooms. 5. I doubled ketchup / whistershire sauce and added 2 Tbl spoon brown sugar. put 1/3 sauce in meat. 2/3 on top for last 1/2 hour. Yes -- my husband loves it and can not tell it is gluten free! Bacon. It brings the man to the dish :-)
